You need the following products:
400 g of carrots
Red pepper
1 piece of fresh ginger (2 cm)
2 tbsp. olive oil
200 g canned pomegranates, drained
Avocado
½ tsp. cinnamon powder
½ tsp. cumin
1 tsp sweet red pepper powder

Garam masala
1 tsp dried thyme
Salt
freshly ground black pepper
Thyme flowers, according to the season
Here's how to prepare the recipe:

Start by peeling and dicing the carrots. Remove the seeds from the pepper (if you want it spicier, leave the seeds) and cut it into fine pieces. Also peel and finely slice the ginger.

Next, heat a pan with olive oil and fry the carrots, pepper, ginger and pomegranate until golden. Add the spices and thyme and season with salt and pepper. Let the pomegranate and carrot sauce simmer on low heat until the carrots are soft but still crisp. Add roughly chopped avocado pieces. Optionally, you can also prepare avocado puree.
