Ingredients:
1 kg potatoes (boiled before that day) 1 tsp salt Black pepper, freshly ground 2 tbsp cow butter in a pan 2 tbsp milk 750 g veal fillet or pork fillet 200 g white mushrooms 1 onion 50 g cow butter 2 spoons of flour 1/4 liter beef broth or meat broth 125 g cream 1/8 liter dry white wine A little lemon juice 1 teaspoon pink pepper Method of preparation:
For the Rösti, the boiled potatoes are first peeled and coarsely grated. The potato mixture is seasoned with a little salt and pepper and fried in a large pan with prepared cow butter. Rösti is fried over medium heat until golden and crispy and then kept warm.
For Geschnetzeltes, thinly slice the beef or pork tenderloin and season with salt and pepper. Mushrooms are cut into slices, and onions are cut into small cubes.
Fry the meat quickly in a pan, remove and set aside. Fry the onion and mushrooms in the same pan until soft.
Then add the flour and mix well. Pour the beef stock or meat stock into the pan and stir until a creamy sauce is formed. The cream and the white orange are also added to the pan and stirred. Finally, the meat is returned to the pan and cooked in the sauce. Geschnetzeltes are seasoned with lemon juice and pink pepper.
